Why no 8-way Xeon servers? Well, if you look at the SPEC benchmarks (not just int_rate and fp_rate, but also server benchmarks), Xeon just doesn't scale near as well as Opteron.

Not enough memory bandwidth to satisfy 4 Xeons, let alone 8.

increasingly, though, computing companies are emphasizing an alternative called "scaling out," spreading work across a large number of vastly less-expensive low-end servers.

Very encouraging for Opteron! Eliminates one of the few advantages that Itanium has over Opteron, high end scalability.
