Again, deferred stock is a great incentive, and just as valuable as options, if done right.
This would imply he would have a long term interest in the company, but the stock would not be his until certain guidelines were met (sales, product, profit, share price, or some combination of all) within a given timeframe.

I'm not saying the options were a bad situation in Jobs' case, just that there are other means available.
