I've used several flavors of linux. I currently use redhat. I've used mandrake, Suse, Caldera and I toyed with a couple of others.

Redhat is not bad and the current install process is far far simpler than when I started. All linuxes are basically the same. The differences are in what the default packages are and how the install script is written. Any linux can runs any application written for linux.

Server or desktop is a symantic difference on what applications are running. Any computer of a P3 coppermine class or newer would be hard to slow down no matter what applications you were running. Server or desktop.

My web server is also running the gui with desktop applications.

It also runs a mail server. ftp and secure shell. ssh.
