You don't plead innocent because you ARE innocent. No need to plead it.

You plead not guilty because what the state wants to do is prove you guilty.

I never heard anybody say you are "not guilty until proven guilty."

Scotland does have a verdict of "not proved," which means we think you probably did it but the state didn't carry its burden. But we don't.

So if you're found not guilty, then you ARE innocent.
