When we have sufficient data to have confidence in our beliefs, we call our beliefs "knowledge" although that may be a stretch in an absolute sense.

Precisely. Both what we call knowledge and what we call belief are really belief. It's a matter of our confidence. If you are confident that the earth revolves around the sun, you say you "know" that. If you are confident that God exists, you say you know that. Same thing.
