I have done it both ways. Frankly, there is not much meat on the back, and the grease does not rise too high, so it doesn't matter much. A goose is not much more greasy than a couple of ducklings (roughly matching total size). If you are used to a turkey, the proportion of meat to bone will disappoint. Taking into account how much is inedible, it is like eating filet mignon, or a delmonico steak. I think it is worth it. The flavor is richer and deeper than turkey.
