If Dean is a straight arrow why did he put his governor's records in hiding for ten years...

Dean says he put his records under lock, to protect the communications with constituents. One such person, who has AIDS was seeking his help. Dean felt that these people should have privacy in their matters with the government, so he closed his personal records. This was a choice open to him under law. Dean's public record, is just that, public. Everyone has access to what he did and said in the public forum.

...and change his polcies eight times?

Don't know what policies you're talking about that he changed. But one thing that we need in government is the ability for our leaders to change their minds and their policies. Who among us has not changed their mind on matters of politics? Why should a politician be held to any higher standard? So long as he gives his reasons for policy change, so be it. Kerry voted for authorization to go to war. Then he voted against the $87 billion Iraq bill. I think you are letting your politics get in the way of clear reasoning.

I also find his story about backpain for dodging the draft very unlikely to be true. dean is straighter than Bush but he's not exactly a straight arrow at all.

I think that Dean's back should not be an issue. The military doctors who examined him gave him a deferment. He does have a legitimate back ailment, one that the military recognizes could affect his ability to serve. Just because his ailment prevented him from entering the military, does not mean that he should have been bed ridden. The story was that he went skiing, and other active things. But folks that have the similar ailments as Dean can do a lot of things. But when asked to do them on a continuous basis it can lead to a very painful and debilitating outcome. For example, riding in a tank for 8, 10 or 12 hours straight, which is difficult for a healthy person, might be a problem for someone with a curved spine. It could put them in severe pain, and then put at risk the rest of the soldiers in the tank. We have medical deferments for good reasons.

On the other hand, Bush's entry into the TANG was paved with the winks of poppy. Bush signed a paper saying that he did not want to go to Vietnam. Then he went AWOL for almost a year, and was grounded for missing a physical.

I don't think you can compare Dean to Bush when it comes to military service. Two different stories with two different reasons for serving or not serving.
