Ah, the e-coli thing. That only happens when a packing plant worker breaches an intestine and then touches the meat. On a steak it's on the outside and killed during cooking. With ground meat it could be inside and not killed if the patty is rare.

I get a lot of my meat from a local locker plant and eat it still cool in the middle and have never had a problem. Now the ground beef from the grocery I cook pretty thoroughly but I get the 85% lean so it doesn't dry out as bad.
