I didn't realize what a serious cook you are!!!

Regarding roasts.
Did you let it rest for 20 minutes after removal
from the grill?
Meat needs to rest so that the juices flow back
up to the surface from the center where they
gather during the cooking process.

It can taste tough if you cut into it too soon.
