BREATH is awful but he's healthy!!

The reason he is healthy, is no one will get close enough to give him germs.

BAKED CHEESE GARLIC GRITS

2 2/3 Cups water
2/3 Cups quick cooking grits (not instant)
2 Tablespoons butter
2 Large eggs lightly beaten
8 Oz loaf light prepared cheese product cut into 1/2 in pieces (this translated is Velveeta)
2 cloves garlic (I usually use garlic salt to save time)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon red pepper (I usually don't add this)
Cooking spray

Bring water to a a boil; add grits and cook, stirring often, 5 minutes or until thickened. Remove from heat.
Add butter and next 4 ingredients;stir until blended.
Spoon into a 2-quart baking dish coated with cooking spray.
Bake at 350 for 40 minutes or until lightly browned.
Yield 3 1/2 cups.

NOTE Casserole may be chilled up to 8 hours. Let stand at room temperature 30 before baking as directed.

If you like your food spicy, you may up the spices to taste.
This is not low cal! I usually double the recipe, and bake it in a 9x13 in baking dish, let it cool about 5 minutes, and cut it like a cake to serve.

I have served it for dinner with ham, as a substitute for potatoes or rice.
It's Wonderful for any brunch or a special breakfast.
