Al Michaels of sports fame eats potatoes and that is as close to a vegetable as he'll eat. Matter of fact the only one and not often. He's a meat and meat kind of guy. I saw him once on TV and they talked him into eating one bite from a carrot. He said it wasn't bad but he'll never eat another one.
