Wild goose has the same fat to meat ratio as beef tenderloin. OTOH I knew a guy who raised tame ducks. He butchered them at 6 weeks because all they would put on would be fat after that. Even at that age we'd get almost a pint of fat drippings off of one when it was cooked.
