Well it probably wasn't the server acting up but the latest virus which is a variant of another recent one. Clogged up the Net all over. I received one on HOTMAIL but was able to see it for what it was worth and delete it. Risotto (the Italians evidently refer to it as risotti) uses a wide grain rice rather than the long grain we are used to. When you cook it (it takes 20 minutes and you need to watch it carefully and stir frequently with additions of liquid) it becomes very creamy and tasty... yet the rice will stay firm without breaking down. There are hundreds if not thousands of recipes using....
