I don't use Outlook, but you can do what you're asking in OE Express.

In Outlook Express...folders etc.

Open a folder click on an email from whoever you want to sort...click on the "from" tab at the top of the window. It will sort all the emails from that sender alphabetically and by date received...along with all the other senders in that folder.

I find the organization in Outlook to be rather good, with the exception of the lack of "New Mail" propagation through the folder hierarchy.
