I believe that many converted to Islam. The talmudic sources are sparse on this subject. Those who didn't convert were subject to a "head tax", and since the Arabian Jews of the 6th century were relatively prosperous this was encouraged.

As family wealth was reduced, the tax was often 50% of production, there was incentive to emmigrate or convert. After the death of Mohammed, and the resulting power struggle between his blood heirs (Shia) and bueracratic heirs (sunni) there was a new edict making Islam the only religion allowed in Arabia, at which time the remaining jewish populaiton either converted, left, or were subject to elimination.

Large Jewish populations continued in Yemen, Bahrain, Iraq, and other middle eastern nations to the present.
