Kansas City-Based Pasta Company Takes on Low-Carb Market Derek Kenyon In the last 16 years, the American Italian Pasta Company in Kansas City has grown from one plant in Missouri to the largest dry pasta producer in North America. But now, the company is being challenged by the popularity of low-carb, high-protein diets such as the Atkins and South Beach. The pasta industry has seen its sales dip five percent in the last year, although American Italian Pasta's revenues haven't dropped much. But rather than hoping that low-carb diets are just a fad, American Italian Pasta has embraced the trend. The company has a deal with Atkins to make a low-carb pasta sold under the Atkins label. And it is creating reduced carb pastas to sold under its own seven regional brands. Company CEO Tim Weber says the new brands offer a product that is in line with what consumers want. The pasta is in some stores already, and should be available almost everywhere by June.
