In the big hotels many (but not all) staff spoke English. we hired a driver named Mao for some trips :o) that said he used to be a translator in the army and spoke several languages but his English was not that good. This is definitely an area where India has it all over China and will for a long while. China is however taking measures to remedy this situation. I guess we won't see success until we see it.. With street vendors and in restaurants we did a lot of pointing though. And yes they all understand counting in US dollars or use a calculator to show you the amount... No more daunting than some parts of Toronto.. We often had a friends that spoke Mandarin with us but not always.. One that spoke only Cantonese was doing no better than us unless she wrote stuff out .. I know some rudimentary words, left over from my youth but they are Cantonese and didn't help, English was more use... The export of American culture is a great promoter of language to be sure.. :o) If they spoke French it would have been a breeze ;o)
