I am surprised, as I say, I had cheese plates instead of dessert a couple of times in local Parisian bistros, not tourist hangouts, and did not get anything too stinky....Was that the trip where I recommended a Platonic dialogue for a reading? How was it to float down the river?

The sausage was probably andouillette, made from tripe, which is infamous as revolting to American tastes. Not to be confused with andouille, made from ham, which we love.

Or maybe boudin rouge or another blood sausage. Ick.
