I use little red potatoes for my potato salad.

I also use lots of hard boiled eggs.

Boil or steam potatoes until tender.
Hard boil a bunch of eggs.
Peel and dice eggs....I run mine through a cookie cooling rack...dices them really well.
Peel and cube potatoes and put in big bowl
Mix eggs, seasoning salt, mayonnaise and sweet pickle juice together in separate bowl.
Add to potatoes and mix.

DON'T EVER USE MUSTARD

You can add diced onion.....I like scallions...celery, pickles..whatever you like.

People really like this potato salad.

The only potatoes I ever use for my potato salad is Yukon Gold, unless I'm making a "new potato" salad recipe...such as the one Moe gave us with red potatoes.

We use the max on onion and celery. Instead of salt, we use celery salt. And toss at least a teaspoon full of potato salad seasoning in there for good measure! And I dilute the mayo a bit with buttermilk... maybe a quarter cup or so. The potatoes will sop it up when you let it rest at least overnight in the fridge!

Oh yes, we use the eggs, cut in one of those egg slicers in several directions (sure, you have to be careful, but it is worth it!)

And yes, we do use mustard!
