I have cookie racks.....they are just mesh wire with little feet that gets them up off the counter....that are used for cooling cookies when they come out of the oven. If you put one of these over a bowl and squish the hard boiled egg through into the bowl, they end up diced. Works great. This recipe can be made for one. All you do is reduce the ingredients to reflect the amount of servings you want. You'll have to experiment.....but you'll get it. Don't use anything but red new potatoes.
