The tempura was fantastic! My wife said it turned out much better than she expected... a real compliment from her. We used eggplant, sweet potato, green pepper, spring onion, broccoli (not in hers), jumbo shrimp, portabello mushrooms sliced in strips... yum.

The dipping sauce had ham stock, a couple of beef bullion cubes in it, teaspoon of sherry, and 2 kinds of soy sauce plus a little Equal.

I brought the oil to 360F, dipped bunches of the food into flour first then into the tempura batter (a packaged mix with seltzer as the liquid) and then dropped carefully into the hot oil.

My biggest problem was the second batch... took the thermometer out after starting the first batch and didn't turn the heat back up to high.... but it really turned out well anyway (I checked the temp of the oil then boosted the heat).

We could have fed 4 but preferred to eat it all ourselves, thus defining "pigged out."
