Call me a liar if you like. The doors were never open for the ENTIRE flight, but they were open from time, when the pilots needed to use the facilities or for food/beverages from the galley. The key was usually stashed somewhere nearby if someone needed to get in. After many flights one got to know where it was.

I've been on DC9 2 hour+ flights with as few a eight passengers. I can assure you security was quite relaxed in those situations.
