Thanks for the info. Apparently my grocer's egg supplier is using experienced hens rather than young pullets.

In Baton Rouge when I was growing up there was a grocery store where you could buy double-yolks by the dozen. It was in a black part of town so maybe this was cheaper because they were rejects? But I always bought them when I could because I like the yolk better than the white. They make the most wonderful scrambled eggs.

As you might imagine, I don't worry about cholesterol. Probably should, but I can't help but think it's actually good for you, full of vitamins. Not the cholesterol, but the egg yolk.
