Pigeons taste just like doves. When we hunted in South Dakota farmers would invite us to hunt because we shot pigeons. One place didn't want us to shoot rabbits close to the barn for fear of spooking the cattle. While we were eating lunch the farmer said the worst pigeon was walking in the feed lot and could we kill it. I said my 10 gauge would reach it but it would spook the cattle, big and loud gun. He says shoot it. Blam, dead pigeon, cattle knocking down fences and he says thanks.
