Mutton has that unfortunate "paraffin" taste of old, heavily marbled beef, as if you are eating something with candle wax on it. But spring lamb, with lots of garlic and oregano, is wonderful.......

Years ago, we had mutton at a lovely, rustic restaurant in Salisbury and it was terrible-- both the mutton and the entire meal. The meat was overcooked and stringy and tough. The meal was traditional English fare and I seem to remember blah peas and some kind of bland potatoes. There was a weird pudding for dessert-- it may have been spotted dick, which explains why I repressed the memory.
