Because they more accurately depict the blue/red state dichotomy. In terms of who would start out controling what if the red voters where the new Union and the Blue the new confederacy/rebellion, the plain state and county voting maps are more relevant. If someone argued that Bush won a landslide because of all the red on the state and esp. the county map they would be easily refuted by the maps adjusted for population but the discussion here is more about secession that about how big or small the vote margin was.
