But who was shooting at who, and why?

That is the $64,000 question of the day.

If the Mnong is correct..and he was shot at first, his response to take out the shooter, looks reasonable to me.

If the rest were on ATVs and raced around trying to mow him down, that too is using deadly force and his response to that looks reasonable.

As you infer, the devil is in the details. I don't believe we have all of them yet. I sure don't expect the news to have the story 100% right or fully correct the first day. But from what I've read, this guy did not snap. He defended himself against a deadly attack by launching a fierce counterattack.
On a battlefield we call fierce fighters heroes.

We need to evaluate and analyze the response of the Mnong. We also need to evaluate the actions, motivations and intent of the 8 who accosted him, and likely assaulted him in the woods.

If the survivors confirm their side shot first and their buddies tried to mow down the Mnong with their ATVs, I believe it will be very difficult to prove murder or insanity.

If such is the case, the Mnong single-handedly wiped out a murderous gang of thugs. Even if true, we won't see that description of events in the newspapers.
