I hope not. I like the pie crust fresh, and by the time the dinner is finished, the pumpkin will be set. I'm going to whip the egg whites, so it will be fluffy-ish, and I think that's probably best fresh. This pumpkin pie will be entirely sinful, but I sometimes make a pumpkin pie for N and me that has no fat in it except what's in the crust: Eggbeaters and evaporated skim milk. It still has carbs and sugar, some, but it's low fat and still tastes good. Not superb, but good enough for us. I only use canned pumpkin, Libby's. I hope you do, too. You don't start with a pumpkin, do you? I under-sugar all pies. You can sweeten whipped cream, if you want, and ice cream is very sweet, if you have those with the pie. Here's what I do when I find myself with a bag of under-par, unsweet, disappointing peaches... Instead of wasting them, I use them for a peach pie, and sweeten it with peach preserves, or peach preserves and orange marmalade, and if I have raspberries around (there are usually some frozen ones), throw some of those in, too. Plums, too. I've also used apricot jam and orange-apricot preserves for the peach-upgrade. (The latter from Sarah Beth--the kind that has that gold badge on the jar because it won a prize. My favorite jam.) Everything else in the pie tastes so good the crummy peaches seem to rise to the occasion. On the subject of food, here's a delicious product that we just had some of next to yesterday's cold eye round roast: Renner's Saffron Peach Chutney. www.creativecuisine.com I bought a jar of it at a farmer's market, and it's sooo good, an unusual but not weird taste, as a sweet embellishment for meat or poultry (you should pardon the expression, Grainne!) that I called the number on the jar 888 999 5733 and had the woman, who was the one from whom I bought it, send me a few jars. There are small jars and one pound jars. I just checked the url, which I'd never visited, and see that it calls this product "fiery" and sweet. It's not at all fiery, imo, though I just noticed "jalapenos" on the label. Just tangy and sweet and lovely with any roast meat.
