Is it true that SNDK is involved in NAND, but not NOR?

Yes.

Is NAND suitable for use in cell phones?

It is useful for data storage. I think someone might have already made the analogy of NOR is like DRAM while NAND is like a miniature hard disk. There has been talk of advances in NAND that will allow it duplicate at least some NOR functions, thereby sharply expanding its possible markets. Conversely SSTI (which currently only makes NOR and focuses primarily on low end NOR markets, although they are slowly getting into other NOR markets as well) has talked of making their NOR chips act more like NAND chips, though I don't think any products have actually come of this yet.

BTW, INTC and AMD only make NOR. So their comments on flash markets and pricing are not particularly relevant to SNDK, even if Mr. Market in his "wisdom" acts like it is at times.
