You're never going to see a float full of nuns. Not real nuns. They don't go in for that type of behavior. Nor do priests.

Parades are for egotists and extraverts. And floats cost a lot of money. People I know in New Orleans that parade in amateur parades every year spend several thousand dollars every year per person, for the float, decorations, costumes, throws, driver, gas, storage. It takes many hours per person to make a new float every year.

Priests and nuns don't have that kind of money or time, and if they did, they'd use it for something more worthwhile.

And where is it written that we have a right not to be offended by individuals or organizations of faith?,

We don't have a right to not be offended by anything.

The non-Christians who are easily offended should get over it.

And the people who think that there is nothing to this but PC to avoid offense should also get over it.

And the people who are offended over the discrimination against the Christian float should either get over it or reconcile themselves to letting gays into the Boy Scouts. You can't have one without the other.
