Straight from the source, one of Italy's premium espresso bean roasters, Illy: illyusa.com

"Freezing the coffee coagulates the natural oils contained in the bean. In an espresso, those oils emulsify to produce the wonderful body and satisfying mouthfeel of this special cup of coffee. Refrigerate, but don't freeze coffee."

I not only dont freeze coffee beans, I dont REFRIDGERATE them either. The MODERN day refridgerator DRIES OUT the beans just as it would DRY OUT cigars due to automatic defrosting. Just buy only a few weeks supply at a time and keep them tightly sealed in a reasonably cool area. jdn
