<<My new favorite fish is rockfish (striped bass), which are local, so usually fresh. >>

They can also survive in fresh water and are in some of the lakes I fish. I've never caught a really big one, 21 pounds is my biggest to date. I filet them and cut off the red meat which can be strong. In lakes where they feed on gizzard shad they are very mild but if threadfin shad are the food base they have a very strong flavor.
