Most uninstall programs do leave bits and pieces around after an uninstall. Some tell you what they were unable to remove and some don't. I use a registry cleaner to sweep the place afterwards. I've never used Giant but have read in more than one place that it's very highly regarded. My main line of defense is SpywareBlaster to keep most of the nasties off my hard drive. What does get though (mostly cookies) is cleaned by PestPatrol, Spybot, and AdAware. Of course, my puter condom includes a firewall and anti-virus program. Ten minutes a week updating and twenty running has worked for me so far (knock on wood).
