From the Dream Dictionary:
To see geese in your dream, represents domesticity. You are well grounded.

Even in reality, seeing flocks of birds makes me sad-- I don't know if it's the symbolism of seasons ending or just that I start thinking about those poor tired birds trying to make it to a warmer place.
You have talked about moving. Maybe it is the leaving of your current life, which has been so full and rewarding in this home that is sad.

It is difficult to be sure of the dream meaning of symbols such as the Snow geese. Interpretation is perhaps highly subject to one's culture, and even to such things as one's personal mythologies and symbolism. For me, I expect that animal symbolism is probably somewhat different and perhaps deeper than for many -- partly due to the way that I live my life and the amount of time spent observing animals in their habitat, but also due to my knowledge and grounding to the meaning of animals within certain aboriginal mythology. I feel that this knowledge must greatly influence the imagery and symbolism in my dreams. Also, there is more that has to do with my own perception of the world and the way in which I sense things happening around me -- that leads me to regard the dream of the Snow geese in a way which is perhaps a little outside of normal interpretation.
