Thinking back to 1972 or so, the picking were sure slim for vegetarians and "natural" foods.

I remember trying to go vegetarian back in the late 1970's and giving up because there just didn't seem to be much to eat besides brown rice. We thought of vegetarians as people who ate roots and tree bark, and that didn't seem to be far from the truth.

Today there is Whole Foods (still checking out UNFI!)with its wealth of grains and veggies, loads of substitutes made from healthy soy, lots of vegetarian/vegan cookbooks, and a lot of support from others looking for a healthy diet. You know how far we've come when wedding invitations include a vegetarian option as an entree choice!
