Never had tripe in pho, beef and chicken yes, but tripe does seems like a natural ingredient for pho, perhaps the best, and never heard of mondongo until Google informed me that it is Dominican menudo.

I thought you meant moronga, and had perhaps misspelled the word. Moronga in its classical formulation is simply fried or sauteed coagulated blood but now has been toned down to a simple blood sausage.

I have had the opportunity to have moronga Old School style, but I had to refuse. And blood sausage doesn't do anything for me.

There are limits.
