I don't know.. I just don't know. He started out as young man being a chef and worked as such, for awhile at one of the biggest hotels in Spokane, the Davenport, before he quit to move to ranching.. But he was like me, or I am like him, <g>, he was a good observer and reader. So he formed his own opinions..

I still can't order or eat any cream-type pie in a restaurant.. Or any kind of a creamed (mayonaise-based), salad-type sandwich, egg, tuna, etc. in a public eating place. He drilled that in our heads.. <g> He had seen how they were prepared and saved.. <g>.. But that was a long time ago and I know how things have changed. But within the last couple of years, we were on a road trip and Mary ordered a tuna salad sandwich to my chagrin at a well-known restaurant chain and got food poisoning.. :(

My understanding is that aluminum - aluminium to some ;-) - pots are only a problem with acidic foods, especially if they remain in the pot cooking for an extended period of time. For example, one should not cook tomato sauce in an aluminum pan. The acidity apparently causes greater amounts of aluminum to leach into the food. Not a problem, BTW, with anodized aluminum - at least according to Calphalon. ;-)
