My DVR can record two shows at the same time (and also provides picture-in-picture, even if the TV isn't so equipped). They're adding in another feature soon which will allow me to record three shows at the same time, if the third is recording to VHS or DVD.

It's cheap, too -- only like $7-8 a month.

Man, I watch a LOT of TV these days. :)
