One of the arguments for using hydrogenated oils is that they don't get rancid (bacterial reduction is inhibited which would otherwise be leading to free radicals and further oxidation.) That's gotta make you wonder: if the bacteria can eat it, should we?

Ever smell oil that has a "dusty" odor? That the beginning of the rancidity process. Rancid oils should be avoided.
