What I don't get is why fundamentalist creationists demand that we keep an open mind about evolution, but a closed mind about creation.

Maybe because evolution is more threatening. Whether the big bang just banged on its own or whether God banged it is a pretty impersonal. Re evolution, some people get really upset at the thought that they might be kin to monkeys. It affects their self image and disrupts their equilibrium. And it sure takes a whack out of the image and likeness thing. That it could be so is just too distressing to them. Creation doesn't have those emotional hooks.

I subscribe to the theory of theistic evolution

Makes sense to me. That's the way I reconciled the two way back when there was something that needed reconciliation. It seems so natural to me that I still struggle to appreciate why it's even at issue.

They are the ultimate slippery slopers. They believe that if you can prove that Noah didn’t cram all live on Earth into his gopher wood boat, you can prove that Jesus was a fraud. I think this attitude betrays a lack of faith.

Christianity has always believed that God reveals Himself through the Word AND nature. If we learn something about nature that seems to contradict scripture, either we've made a mistake in the science, or we have misinterpreted the scripture.
