Plenty of things are, and even more things have been institutions. If we actively tried to perserve them all it would be a disaster.

Also I don't think that they would die out so easily. The can find niches. Also farm subsidies actually exert some pressure to speed up the dieing out of family farms, while at the same time providing some help to them. Its not entirely clear that the net effect is a strong one in favor of keeping family farms around.

So I guess my response is pretty similar to yours.
