Because the additional money they were taking in because of putting the symbol on those products was lower than what they were paying out. That's business.

And the fact that they could do this without disaster befalling them shows how it is not in any way a "tax".

That is cost benefit analysis applied to business.

After checking all Saran Wrap competitors for signs of kosher certification (they all have it) she decided to stay with Saran for quality. Smart marketing, that is business too.
