Use a cast iron skillet, add a little olive oil and put on high. Put pepper and Lawry's salt on both sides of the meat. When the oil starts smoking add the meat and after 20 seconds turn it, that sears the meat. Then I cook it for couple of minutes on each side. For more well done meat turn down the heat after searing and cook longer.
