there is a transport difference.

it takes one week to transport venezuelan oil to the US and roughly six weeks to transport from saudi arabia.

thus, in the event of an abrupt cut off by venezuela, there would be a gap in supply.

but you are correct in that with minimal adjustments, sour from another supplier could be processed by refineries set up to process venezuelan sour.
