What they want is to have public displays on GOVERNMENT property removed. It's important to remember the entanglement is with the government. So is your argument that if someone doesn't like government entanglement with religion they should eschew their holidays? There are many Christians who don't like the idea of government entanglement with religion, do you think they shouldn't take holidays either? And what, exactly, does being against government entanglement with religion have to do with taking advantage of a private employers' vacation package, designed with the retention of employees in mind, and not (probably) designed in order to honor any religion, or religious figure. I don't think most people care WHEN they get their vacation as long as they get it. Would you feel better if pagans took their vacation time all in June?

My company has gone to a floating holiday model. Production personnel must take certain days off because MOST people want those days off. White collar people frequently work some of the designated days, especially when they don't fall on the weekday. Why does the government saction of a holiday indicate anything about someone's convictions? The benefit of Christ is that we get Christmas off? That is weak. We don't get Easter off so is the Resurrection LESS important? Sort of thought THAT was the real benefit of Christ.
