Ooooh, he'd love that.... He likes calves' liver too...Long time ago, another of our friends took pity on him, because she KNEW it was the LAST thing I'd make...so she fixed something else for me, but liver for the other 3...However, she shamed me into at least trying a ittybitty piece. I did. And like it! Couldn't believe it myself. Turns out, I didn't know how to make it right.

Before cooking anything: soak liver in milk for an hour. Then put in bag with flour and salt & pepper. Shake.

Then:
1st...Put butter (not margarine) in pan. Cook onions till some are carmelized. Take out of pan, and keep warm.
2nd...Cook bacon in same pan, but by itself. I precook it in microwave, then finish in frying pan... Take out of pan, and keep warm.
3rd:..Cook floured liver in butter in pan till done..(I cook mine well done...or can't look at it...)
4th:...Then, when on plate, cover cooked liver with onions, and top with cooked bacon.
It really is good this way!

I didn't like the taste when I cooked the liver in bacon grease...at all....
