Smithee, I dunno, salmon, like dust mites,* may lead a multifaceted existence of which none of us can be even remotely aware. It is food for thought, I'll grant you that.

CGB made reference to "joyful salmonhood." Since she is so very much into and on top of the sciences and has an uncanny ability to come up with all sorts of references from all sorts of websites to support her perspectives, I thought her personal experience re the tastiness of a product of "joyful salmonhood" versus the product of "joyless salmonhood" worthy of some exploration.

My experience is that salmon is good stuff, and the fish who perhaps lived their lives in "joyless salmonhood" can be turned out into a most tasty dish when marinated in dry vermouth, garlic, lemon juice, and grilled and then poached in the marinade--my personal favorite, although I am sure there are other means of preparing a "joyless fish" which will give the diner great epicurean joy
