Sometimes people are buying them for "instant family" as PB just said, but other times, they are buying them for the "art work" type value....like tin types were made in a certain time frame, and scarce, therefore, more valuable. Some people collect costumes of a particular period. Etc.

You never know why people collect the things they do. I didn't know what "covers" were....turns out they are envelopes that have the stamps, and cancel marks, plus the address to and from on them. Some people collect 'covers' from a certain area of the country, sometimes for the stamps, and sometimes for the postmarks. I've seen these "covers" range from as little as $1 to as high as $10....and that was about 5 years ago.

Me...I just attach the envelope to the letter that came in it, because it has lots of clues. i.e. Where the addressee was at the date of the postmark, and ditto the person the letter was from...plus the added value of the postage stamp.
