My QuickTime problems were only with one particular site, and it turns out that the files I'd been viewing are actually mpegs, and the links are designed to have the user download the file first and view it later. I was supposed to be right-clicking (Windows) or Ctrl-Clicking (Mac) to download. Instead, I was just clicking.

With the previous version of Safari, what happened for me instead was that a new page would open up with a QuickTime player, and the file would just play. What happens now is that page opens up, the new QT logo is displayed, and then nothing happens at all.

So basically, the old Safari was doing something for me that made things more convenient. Kind of going beyond the call of duty. The new version is trying to do the same thing, but failing.

Now, if I download the file, like I'm supposed to, it plays fine. In QuickTime.

Again, these are mpeg files, not QuickTimes, so I shouldn't blame Apple. It may even have to do with a preference setting somewhere with respect to file types.

I've got the Quicktime 7 installed, but not 10.4. Safari is 1.3 (v312) and they play fine.
