<<The hot and cold faucets being reversed in my kitchen is, I am quite confident, the entire reason I am nuts, also! ;-) >>

Measure from your feeds, that's the pipes coming up from the floor, to the bottoms of the hook ups to your faucets. Get some flexible faucet hook up pipes close to but not under the lengths. Get some crush nuts, probably 3/8" and a basin wrench. Turn off the water and unscrew the feeds. Put on the new flexible feeds to the right hook ups using the crush nuts and plumber's tape. Right will be cold and the left hot. Child's play.
